Food safety management systems (FSMS) are intended to provide organizations with the elements of an effective food safety system in order to achieve the best practice in food safety and to maintain economic goals. The intention is that these systems may be integrated with other management requirements such as those for quality and the environment. The system upon which this Course is based is the ISO 22000:2005; Food safety management systems – Requirements for any organization in the food chain. This Standard has been developed in response to customer demands for a recognizable Standard against which an FSMS can be audits may be conducted and the organization certificated.
The consequences of unsafe food can be serious and ISO’s food safety management standards help organizations identify and control food safety hazards. As many of today's food products repeatedly cross national boundaries, International Standards are needed to ensure the safety of the global food supply chain.

- Explain the purpose, content and interrelationship of ISO 22000, guidance documents
- Explain the role of an auditor to plan, conduct report and follow up an FSMS audit in accordance with ISO 19011
- Interpret the requirements of ISO 22000 in the context of an FSMS audit
